Feel free to make this recipe your own. Add nut butter, cocoa, chocolate chips, bananas or even make it savory by adding some veggies and salt (just omit the sugar).
Best Never Ending Oatmeal
½ cup oats (preferably organic and gluten- free)
1 tablespoon chia seeds
1 teaspoon cinnamon
½ teaspoon vanilla extract
8 drops stevia or 1 tablespoon brown sugar
1-1/2 cups milk or water (use less water if you aren’t planning on heating it up)
Add- ins: Nut butter, chocolate, fruit – for savory option add your favorite veggies and a fried egg- yumo!
1. In a mason jar add all ingredients. Give it a good shake and leave it in the fridge overnight. What if you forget this step that requires hours of forethought? Don't worry, you can soak the chia seeds for 10-20 min until they become gelly and pudding like. Then you're ready to heat it up or eat as is!
2. If heating, pour oatmeal into a saucepan and add more water if needed. Bring to a boil and then simmer until most of the water is absorbed. If using a microwave, heat on high for 3 minutes. Let sit for 2 min and reheat again for another 2 minutes adding more water if necessary. Or if you’re in a rush, just heat on high for 3 minutes. (All 3 options work and are equally tasty)
