Summer Shrimp Stir-Fry
- Heat 1 tbsp. olive oil in a medium skillet. Add the minced garlic, and when the oil is hot add the shrimp. If using pre-cooked shrimp skip this step and go to step 3.
- Heat 1 tbsp olive oil (and garlic if skipped step 1) and add zucchini in one layer cooking for one minute, tossing once. Move the zucchini to the edges of the pan and add corn cooking for one minute (skip if using frozen).
- Add grape tomatoes, salt and pepper, and shrimp. Cook for an additional 30 seconds then remove from heat. Squeeze lemon and top with fresh herbs.
- Serve, large portions and enjoy with a glass of Rose :)
